What's Cookin' Good Lookin' Cooking Challenge - Week 1

I am participating in my Maintainers Team Cooking Challenge. The challenge is, we choose a recipe to make, then make it, take photos, and post a little review here. Those of you who follow me on Pinterest know that I pretty much "review" every recipe I make! So this is fun for me.

Anyway, I opted to make Skinnytaste's Pasta with Butternut Sauce and Spicy Sausage & Baby Spinach: www.skinnytaste.com/2012

I mainly chose to make it because J is out of town this week, and he dislikes butternut squash, so I'm taking the opportunity to make it while he's gone! I also had right around a pound of butternut squash already diced in the freezer, and 8oz of pasta to use up.

This was a really tasty pasta, I really liked the sauce. It was also pretty easy to put together and didn't dirty up too many dishes, which is always a good thing! I made it as 4 servings, using 8oz of pasta. I left out the sage, as it often bothers my stomach. Next time I might add fresh thyme to add a bit of flavor to replace the sage. I calculated each serving as 511 calories.

I will definitely save this recipe to make again sometime (when J isn't home!). I plan on enjoying the leftovers for lunches tomorrow and Friday, and sometime over the weekend!

    It looks great! I'll definitely give this a try when I can find some butternut squash at the local market. And I think the thyme would really be a nice addition.

    Thanks for your comments ladies :) SEATTLE58, using the squashes really gives the pasta interesting flavor... and since it's pureed up it's doesn't feel like you're eating big chunks of squash, which I'm not as big of a fan of. I've made mac n cheese with butternut squash puree before too and it was great!

    Interesting! I've been so leery about all the squashes there are now in recipes that you'd never think of having in them.I guess I'm a slow learner, but I'll be brave and give some a try when I'm by myself too! emoticon
