Challenges failed: no dairy (1oz chevre on my lunch salad)
All others met.
To day we were out and about town, my Jeep needed an oil change and we were in and out of the office of our immigration agent. This afternoon we had to wait an hour till she could see us. There is a slight problem with DH's visa (FM3) - last year he was a day or so late filing and despite paying the fine, they "reset" his visa to year 1, so he is now a year behind me. After 4 years you get to apply for "permanente" which allows you to work (like a US green card - been there, done that... ) At least now we can get visas for more than a year, which really helps - no more yearly renewals - pictures, copies, bank statement (which have to be translated) and agent fees, Mine will be for 2 year and DH had to get 3 years to fulfill his 4 year requirement.
At least we should be good for a while!
Breakfast - flax seed granola with blueberries and a splash of coconut milk
Lunch - green salad with 1 oz goat cheese (chevre) and pumpkin seeds drizzled with citrus olive oil, bowl of spice veggie soup
Snack - 1 oz of 72% dark chocolate and a pot of Earl Grey tea.
Dinner - 3 oz apricot and chipolte glazed chicken, romaine, carrot and beet salad, sauteed zucchini and onion with basil
The glaze was nice and spicy, the chipolte gave it a little smoky flavor as well and was great with the chicken and veggies.
