Slow cooker lasagna

I made slow cooker lasagna from the SP cookbook yesterday. It was DE-LISH! My husband liked it and didn't even notice the eggplant in it. I had a piece of garlic cheese toast along with the lasagna and didn't feel like I was eating on a diet. This has been a life saver to me finding SP on the web. I have learned I was depriving my body of much needed food and fuel and the plan that starts with an "A". Never going back there. Wish me luck. I weight again on Friday and will see what I have lost on my second week.

    Yes, it is true that 'we are what we eat'. I have been concentrating on upping fruits and veggies everyday and my scale is moving down instead of up.

    I printed out that recipe but haven't made it yet. I live alone so I buy in bulk and freeze individual portions of meat and chicken so I can make myself a healthy meal in a few minutes adding fresh or frozen veggies. The lasagna would be a good one to make and freeze portions.
