Today had 2 items on the menu that would break my challenge. After conferring with Mel, the 72% was allowed, even if borderline. Hey, it's Belgium chocolate, quality stuff :) It is a huge brick but with the difficulty of finding some things here, I'll take what I can get. I'm sure DH will help me eat it over the next couple of months.
The other item was the goat cheese on my lunch salad.
So today all challenges met except for the "no dairy"
Breakfast - flax seed granola with blueberries and a splash of coconut milk
Lunch - green salad with 1 oz goat cheese (chevre) and pumpkin seeds drizzled with citrus olive oil, leftover mixed veggies (from last night)
The goat cheese really made this dish, Creamy and soft - yum. After a few weeks it was nice to have some kind of cheese again.
Snack - bowl of carrot soup
Dinner - chicken with mango salsa, green salad with carrots and 1/4 avocado and steamed broccoli with citrus olive oil.
Mango salsa
1 mango
1 small cucumber
lime juice
2 slices red onion
cilantro
1 jalepeno (more or less depending how spicy you like it)
Chop ingredients, mix with lime juice and let sit for a few hours before serving.
So far I like all the meals on the plan and I love the results. After 3 days I am down 1.3 pounds (only 0.1 this morning but I'll take down!)
