Okay...those of you who know me know my days off come at a hard price. I work a lot so love to have fun and experiment with new healthy foods. This is my last food blog of the day.
This one is a crazy party in your mouth. Seriously Good!
It's a Pesto with two STARS.
Basil and Sun-dried Tomato and they both scream of full flavor once you take a bite. Very Basil forward with a tang of tomato that lingers and makes you so appreciative.
Here it is:
2 cups of Basil leaves
3 full size sun dried tomato circles
3 cloves of garlic
1/4 cup of pine nuts or almonds
2 Tbsp olive oil
1. Place basil, tomatoes, garlic and nuts in an electric food processor or blender. Puree. Add olive oil slowly and blend until the mixture is your desired texture.
This one is so good...you might as well make copies when you serve it to company because they will be asking for it.
