Healthy Breakfasts

I never knew that a yummy breakfast could also be healthy. I'm the kind of girl that could eat a whole package of bacon for breakfast with 3 eggs and toast and be happy and satisfied. I could never get enough bacon. Now that has changed.

I haven't had that kind of breakfast in about a month and I don't even miss it. Today I had scrambled egg beaters with chopped spinach (thank you Magic Bullet) and avocado on top with a side of multigrain toast. OMG it was so good and I was satisfied. How amazing is that?! As long as I can continue eating healthy food that tastes this good then I shouldn't have a problem sticking with my new way of eating.

I make a modified California omelette. I had the real thing in The Cheesecake Factory in Chicago a few years back.
Theirs was :four eggs, sliced tomato, sliced avocado, lots of sliced cheese, onions, served with a huge LOAF of their homemade bread and cinnamon butter.

I make it with two eggbeaters eggs, tomato, avocado, onions, a sprinkle of low-fat cheese for taste, whole grain bread with Olivio spread or dry toast.
Isn't it fun to cheat the menu and make yours better?

    Congratulations! I was never a breakfast eater nor fruit eater. Now I fill up with fruit for breakfast and feel like I'm off to a great lo-cal start.
