We've fallen into a regular rhythm of having Salmon every Monday since we need to get more fish in our diet and Salmon is so nutritious and tastes great. We have it on Monday since our garbage is collected on Tuesday morning and we can get rid of the fishy smell quickly. My retired DH buys the salmon and grills it each week and I have to come up with side dishes.
Our CSA provided collard greens and a huge head of Napa cabbage. I had some small red onions from last weeks CSA pickup. So this is what I made:
1/4 cup water
Red onion, thinly sliced
1 head of Collard greens or Kale
1 half of a large head of Napa cabbage
I simmered the onion in the 1/4 cup of water in a medium sauce pan until it was limp and then added the collards and the napa cabbage and covered the pot and let it simmer until the collard and napa reduced.
Voila, we had a great side dish that you barely have to portion control since it's so low in calories. Give it a try.
