What to do when it's -19 degree's?
Well I'm going to make a healthy winter time soup. This recipe was in Fox News a few weeks ago and sounds good.
I had a most productive garden year in 2012 so I'm digging into the freezer for some of my harvest. I froze tomatoes, kale and zucchini (which was cut into chunks).
I did NOT add the olive oil. Instead I just added all the ingredients together.
I also only added 2 tsps of the cumin and chili pepper as 2 Tbsp seemed excessive. I'm not into spices that much. Then I added about ten basil leaves.
Here are the pictures so far:
The calorie count ended up being 120 calories for 1 3/4 cups.
It smells so good. I'll keep you posted
This was a good soup. I added 3 oz of seasoned venison for D.H. He said it was very good. I felt like the Mexican Soup from my Jan. 14th Blog was better though. This soup does pack a huge punch with very little calories. I will make it again.
4 stars from me.
