I've seen baked oatmeal online but never made it...until now. For four servings, I mixed:
2 2/3 cups rolled oats
2 T ground flax
1/3 cup egg whites (3-4 if you're not using them from a carton)
2/3 cup milk (I used 2%)
4 small apples, chopped in the food processor (not peeled, made no difference)
I baked that in a buttered pan for 35-40 minutes, then cut it into 16 squares; each serving is 4 squares (about 350 calories, with 15 grams of protein, 7 grams of fat, and 56 grams of carbs). The oats held together and were a nice change from rushing to microwave my oatmeal in the morning or fussing with a fancier baked bar. You might want to add a sweetener of your choice and some cinnamon or ginger....which is to say that this version didn't taste like much, but I didn't mind :)
We killed it in TRX this morning, which means it's coffee time right about...now. I am officially the happiest, strongest, lightest, and leanest I can ever recall being.
