This food challenge has been by far the best idea I've had in a long, long time. Three weeks in and I've had 3 outstanding dishes. The Cheesy Vegetable-Stuffed Eggplant was amazing. (Little sidebar - I first tasted eggplant at my bridal shower. Ever since then it has always reminded me of my husband. Weird, yes, but true.)
Visually, this dish was a work of art. And it was so tasty! But then I've come to realize that food that is good for me is so much more delicious than all the rest of the junk. I think part of it has to do with knowing that there is no guilt involved (I don't feel guilty eating these meals, and there's no need for me to feel guilty). Also, what I'm eating is truly fueling my body for whatever I want to take on next. As I savored each bite of this Eggplant, I honestly didn't want this meal to end. Imagine that...I'm enjoying this healthy food so much that I'm eating more slowly so that I can thoroughly enjoy every bite. (Oh, and I promised I would mention that the next night when we ate the leftovers, it was just as delicious as the first night.) Mirage - you definitely knocked this challenge out of the park!
So what will it be this week? Well Honey, you already promised me Black Bean Burgers, some more of your amazing pizza, and the leftover filling from the Cheesy Eggplant in a red bell pepper this week (not all in the same meal), but I'm thinking...Grilling. You have two options - you can use either the big, beautiful grill we have outside or our grilling stone. (You cannot use the George Foreman for this challenge.) Are you up for it?
