Day 21 - The Plan, day 3 Spicy veggie soup

Despite my worries about the rice making me gain, I was down another 0.6 :)
I have never lost weight eating so little protein and so many calories! I usually maintain around 1100 cals a day and with this plan I am eating at least 1400-1500 Scary stuff!!

Today's meals:

Breakfast - flax seed granola with blueberries and a splash of coconut milk

Lunch - green salad with 1/4 avocado and carrots, bowl of spicy veggie soup with coconut milk

Snack - half a pear and 6 almonds

Dinner - Italian roasted veggies and herb roasted chicken

This morning I went to the market and stocked up on fruit and veggies. I am going through them at quite a rate!

I love this challenge, it got me focused and committed. Of course I love seeing the weight drop! 7-1/2 pounds in 3 weeks :) My goal for the end of January was 145 and I have already surpassed that. Now I have 141 in my sights...

    Wow! You were only eating 1100 calories? I would think that is way too low for you ( since we are the same height and all)......perhaps your body has been holding on to weight because it was not getting enough daily allotment of calories?

My LOWEST calorie range on SP is 1400.

I am so happy that you are having such amazing results! whoo hoo! And your diligence has paid off! wow! emoticon

    Both meals look luscious! Your plating looks like mine in proportions: with half being non-starchy veggies. Excellent that you are sharing with photos!!
