Despite my worries about the rice making me gain, I was down another 0.6 :)
I have never lost weight eating so little protein and so many calories! I usually maintain around 1100 cals a day and with this plan I am eating at least 1400-1500 Scary stuff!!
Breakfast - flax seed granola with blueberries and a splash of coconut milk
Lunch - green salad with 1/4 avocado and carrots, bowl of spicy veggie soup with coconut milk
Snack - half a pear and 6 almonds
Dinner - Italian roasted veggies and herb roasted chicken
This morning I went to the market and stocked up on fruit and veggies. I am going through them at quite a rate!
I love this challenge, it got me focused and committed. Of course I love seeing the weight drop! 7-1/2 pounds in 3 weeks :) My goal for the end of January was 145 and I have already surpassed that. Now I have 141 in my sights...
