I've outdone myself - Blueberry Quinoa Bake & Vegetable Lasagna

I bought a box of red quinoa from Wegmans a few months ago and had been searching for recipe ideas. I found a few I was thinking of trying, and then I was like SCREW IT! I'm going to experiment! ...which is what I did.

Boyfriend requested Vegetable Lasagna for dinner last night, to which I replied, "Sure, why not!" I had never made lasagna, so I had NO IDEA that it would take FOR-FREAKING-EVER between boiling the noodles, prepping the veggies and assembling the entire thing, AND make a million dishes. The entire time, I kept telling him, "YOU BETTER LIKE THIS LASAGNA, OR ELSE I'M NEVER MAKING DINNER FOR YOU AGAIN." But it was worth all of the work because it was ahhhhhh-mazing. Boyfriend inhaled it, had seconds and kept saying, "THIS IS SO GOOD" so I gave myself a well-deserved pat on the back.



No recipe for this one, although I could one together if y'all want me to. I used whole wheat lasagna noodles, I made my own homemade sauce (nothing better than homemade marinara), I used broccoli, kale, mushrooms and red and green bell peppers, and of course (whole milk) mozzarella and (reduced fat) ricotta cheese.

All in all, yesterday was a good day for new attempts at cooking!

  First off, I'm totally jealous that you have a wegmans. When I lived in Pennsylvania, that was my go to store. Now I have to settle for kroger, which isn't quite the same. Second, I've read so much about Quinoa, but have never tried it! I'm going to have to make an attempt to make something out of it myself!

    OMG both those dishes look so incredibly yummy!!! Lasagna can be time-consuming, but sometimes I cheat and use the "no-boil" noodles.. they're a bit thinner than regular ones and have a funny, like, corrugated shape, but they still come out delish! Not sure if they make 'em in whole wheat variety though... Thanks for sharing!
