-Amanda79- proposed a fun challenge on the At Goal and Maintaining team - find a recipe each week, try it, and review it. this week i actually found three recipes online that i tried - and each was a winner, to be tried again! simplicity is the name of the game since we are in a rented one room cottage, and choices are limited here on molokai. basically, i buy a variety of canned beans plus tofu and quinoa, along with all the veggies i can find at the organic farm and the two grocery stores on the island, which form the skeleton of our diet. so this week's winners:
the first was cuban black beans with kale:
so unbelievably simple and tasty! chop onions, garlic and fresh ginger (and yes, i do sauté in a minimum of olive oil), open cans, wash and tear up kale - and dinner is on the table! i only had cumin and cinnamon, but they were enough to flavor nicely, and i totally forgot the lemon or lime, but as DH said, it really didn't need it. i would have served on rice if i'd had rice at home, but we had not yet fully provisioned the kitchen. will definitely make this again.
next up - the best (and simplest!) bean burgers ever:
jeff novick is known for quick and simple recipes and these lived up to it, plus add delicious and "meaty". followed the recipe exactly, four ingredients, then broiled - and DH thought they were great. served with green salad and homemade potato salad...
and finally, i had a can of blackeyed peas that i wanted to use, but i wanted a salad. google was my friend and this was last night's dinner:
so... i had red pepper, not green. i used soy sauce, not szechuan, and balsamic vinegar, not red wine - and it was all delicious. i also chopped up a few leaves of chinese cabbage just to bulk it out. another winner, no leftovers either.
so... if anyone is looking to add a meatless meal (or try delicious plant-based vegan cooking), these are all simple and delicious.
