Review of EatingWell's Bulgar with Ginger and Orange

I made this tonight and it was awesome. I loved it.
I read the recipe wrong and I zested both oranges instead of just one. My brother thought it made it too orange-y and made me put some extra soy sauce in it. I did omit scallions because I forgot to buy them. I used light brown sugar instead of regular. I used walnuts instead of almonds. I could have done with out them.
It was a little more time consuming that what I normally make, meaning more prep time. I do wish it included more veggies. Next time I make it, I'll have to add some, maybe broccoli or red peppers? (open to suggestions)
Note: be careful with bulgar. Since it's already partially cooked, it cooks more quickly than other grains. Be careful not to burn it (as I did. I did add some more water to try and fix it).
But I will make again, it was great.
