I've made a commitment to have a variety of veggies during the week so we don't get burned out on one item as a family. Last weekend I bought a bunch of Brussels sprouts. In the past everybody would eat one or two while I loaded my plate. I love them, but made them rarely as they weren't a family favorite.
I don't know if it's because we are eating more veggies in general, but this past week there were two sprouts left in the bowl and my little girls (2 & 3) were fighting over who got to eat them. Of course I made them split the last two, but I couldn't feel prouder of getting them to love a veggie that is often given the shaft.
My daughter was asking to try all sorts of fruits and vegetables at the grocery store last week. It's greatly motivating to get out of my comfort zone and try new items if only for the sake of satisfying a toddler's curiosity.
