Fantastic chicken soup from scratch!

Flu is going around my area big time, and I've been in and out of the doctor's office two or three times a week for an unrelated health issue, so I've been doing my best to keep my immune system running at top speed (plenty of sleep, washing my hands often, keeping on top of Vitamin D and lots of citrus fruits, cutting the junk food out, etc). Last night I decided to make preventative chicken soup, and the result was DELICIOUS! Not to mention easy, nutritious, and completely chemical free. I actually avoided over-salting it, too, which is a first for me. If anyone wants to try it, here you go:

(modified from

-1-2 pounds of (organic) bone-in chicken thighs (bones provide soluble nutrients)
-1 onion
-1 small bag of baby carrots
-2-3 stalks of celery (~half a head)
-2 turnips
-Salt and pepper
-Dash of parsley
-Fat of choice (olive oil, butter, tallow, coconut oil, etc)

First, dice your onion
In a 4-quart pot, melt ~1tbsp of your favorite cooking fat (I used grassfed tallow) and sautee the onion
When onion is translucent, push to the side and add the chicken thighs
Cook each side for a couple of minutes, until browned
Add ~8 cups of water, 2 tsp salt, and pepper to taste
Bring to a boil, and simmer partly-covered for at least an hour (skim if necessary)
Dice up your celery, carrots, and turnips (turnips in chicken soup? Trust me, they're tasty! Like potatoes, but lower calories/fewer carbs)
Scoop out the chicken and add the veggies
Simmer for ~15 minutes (diced veggies cook quickly)
When cool enough to handle pull the chicken off the bone, shred the meat, and return to pot with a bit of parsley

    This sounds awesome, especially as I had the flu which turned into pneumonia :( I could use some homemade chicken soup right now!
