Baked Veggies

I've been trying to get all my veggies in during the day and at dinner I've resorted to coating any vegetable I have on hand ( brussel sprouts, sweet potato, kale...) with olive oil and a little sea salt. Is this a good way to eat my veggies? Or should this be only used a couple times a week. Can this method be used daily?

    Raw veggies are a better way to go--try baby spinach with some vinager and a dash of lemon juice with a dash of olive oil and onion salt or better yet onion powder with no salt added if you need a dressing for your salad......The raw green veggies are great for weight loss--anything green and raw....

    As long as you're varying the vegetables and counting the oil and sodium, I think it should be ok. I love roasted vegetables.
