All challenges met
Still have a headache and it is probably more weather related - there is a high pressure system moving in bringing warmer weather but also a lot of wind, the humidity has dropped from around 60% to 20% first thing this morning. I can tell by my skin and hair how dry it is. Hair has gone flat and fly-away and I had to get the gel out to make it behave.
Last night I cut the veggies for the carrot soup and put it in a stock pot, ready to cook in the morning. I find doing the prep the night before makes it so much easier int he morning - no excuses not to make it then .
It is the recipe from The Plan by Lyn-Genet Recitas. A friend of mine is doing the plan with great success so far. The meals sounded delicious, so I got the recipe.
1-1/2 pound carrots
2-3 cloves of garlic
cinnamon, cumin, onion powder, fresh black pepper to taste
1 qt of water
Chop the veggies, simmer in water with the spice till soft. Puree in the blender
It seemed like a lot of carrots to use up in case I wouldn't like the soup so I used half the recipe :) Also, I have a small blender and I still had to blend it in 2 batches. I cannot seem to find raw ginger here in Mexico, so I used ginger powder instead.
The soup turned out delicious hot or cold.
Breakfast - eggwhite, chia seed, strawberry and blueberry smoothie, pot of English breakfast tea
Snack - bowl of grapefruit
Lunch - 4 oz rib-eye steak and spinach salad
Snack - 10 almonds and a half an apple
Dinner - bowl carrot soup and a green salad with 2 oz leftover salmon
