21 Day Vegan Adventure: Day 14 and Sloppy Joes

I am roughly two weeks into trying on a vegan diet.

Last night I made vegan Sloppy Joes.

I was skeptical when I looked over the recipe. One of the first steps was to saute onions and green peppers in 1/2C water. What?! Doesn't that kill the flavor of them? I envisioned tasteless mushy vegetables in my Sloppy Joe. But my goal is to make room for more plant-based foods and investigate vegan cooking, so I let my reservations go.

The Sloppy Joes were easy to make: "saute" the aromatics and add the meat substitute (I used tofu crumbles instead of the prescribed Tempeh). Then add the usual suspects - tomato sauce, ketchup, cider vinegar, worcestershire, garlic powder, honey - and simmer for several minutes. (There is a vegan worcestershire but I didn't use it.)

The Sloppy Joes were delicious! My son loved them. I loved them. Even with whole wheat buns, they were low-fat and packed with whole food goodness. I am sure they would be delicious as a wrap too.

I think I have a new family go-to meal!

    I don't think I have ever had tofu. Substitute for ground beef, huh? Who knew?
I will be honest and say my eyes are glazing over a bit. I am afraid of vegan!! HA!
I think I am like the suspicious kid, wondering what everything is. You are so right - leave the reservations by the door and TRY healthy things!! Now you have a great meal, awesome!
