On my spark nutrition tracker for thursday is lemon chicken.
I did pre-plan . And I did go grocery shopping for the week.
So, today I looked at the tracker to see what dinners I needed to think about.
So the chicken is in a plastic bag marinating.
You may not think that is astounding, but I do. I NEVER think ahead for meals like this.
I just have not been able to 'get this together!'
While I was teaching, forget it. Dinner barely got prepared. A hunk of cheese, frozen veggies microwaved with no seasoning, snack foods, a banana...... well no planning and pretty much no stopping eating all evening....
It is a year since I have not been working and I am getting the hang of it.
I looked through my spices. Oregano? No, but there were 3 bottles of Italian spice. Basil? Yep I had several bottles of dry basil and 1 container of frozen basil!
White wine vinegar--YES! It even was fresh and unopened. I have been trying to cook for awhile and have been stocking up. Also there was lemon juice in the fridge.
I did it! I had all the ingredients--even the pre thawed chicken!
so the chicken can marinite overnight and I will bake it tomorrow!
