Low Carb Dinner, yum!

Met some colleagues at starbucks, misread nutrition info before going, then realized that there were way too many carbs in the banana nut bread - after I ate it and was entering it into the SP app.
So a low carb dinner was on the menu. I scrambled 3 eggs (Eggland's Best) with some spinach leaves and a slice of provolone, squirted some Heinz reduced sugar ketchup over the whole thing, and ate it. It was awesome! And only 7 carbs. Low carb eating can be very yummy.

    My battle is with fat grams. But, when I was pregnant I had gestational diabetes, and I had to diet and take shots. It sucked. After a few days, I got tired of eating raw salsa and the free foods on the list like raw zucchini, which I ate with the raw salsa. The nutritionist would tell me my calorie count was above average, and I'm sure it was, but I was always hungry. You hang in there and keep being creative in the kitchen! emoticon

    That actually sounds pretty good, minus the ketchup. My boyfriend says that eggs don't taste good without ketchup but I am the opposite. I love them without it. :)
