OMG!!! Mirage's homemade pizza far surpassed anything I was anticipating. It was so healthy and so tasty - I'm just overwhelmed that he went to all that trouble, but it was soooo worth it. This whole wheat pizza dough was jam packed with homemade tomato sauce, tons of freggies (grilled spinach, mushrooms, zucchini, and pineapple to name a few), and just the right amount of mozzarella. It was cooked to perfection - I like my thin crust sturdy enough to pick up in 1 hand with none of the ingredients falling off, and like I said this one was perfection. I'm a Nebraska girl - give me Valentino's anytime. But if I had to choose between Valentino's and Mirage's pizza, that would be a very tough decision. (Mirage knows - that's high praise from me.) And the real test...it was even better cold the next morning for breakfast.
What is this week's challenge, you ask. I'm thinking Cheesy Vegetable-Stuffed Eggplant. Here's the recipe from the SparkPeople Cookbook (This is the first time I've added a link to a blog - I hope it works.):
