Exercise and a yummy supper

Today I started week 2 of the January Jumpstart challenge. Our video today was an 8-minute Athletic Intervals Cardio Workout which I followed with a 9-minute Seated Arm and Shoulder workout. We are to do 5 days of 30 minutes of cardio this week and one additional workout video that we are supposed to report about on the week 2 forum. I wanted to be sure that I'd have time this week (and would remember) to get that extra video in so I decided to start the week off with it.

I'm roasting some veggies in the oven while broiling salmon in the toaster oven. My house is smelling the yummiest right now - I can't wait until the salmon is done!! Should be a really healthy meal, too. Hubby helped an oil & vinegar store to rent a spot at the shopping center down the street and he brought home a bottle of raspberry balsalmic vinegar from their grand opening. I used that to make a vinaigrette for the veggies - hoping that it tastes as good as it smells.
