Okay so I've been making my own mayonnaise. There are a ton of recipes out there and I love it. When I did Whole30 commercial mayo was off limits because of the soybean oil and other stuff in it. And it's hard for me to go back because of all the soybean oil. But happily for me homemade mayo is easy to make and delicious.

which I like but lately I've over emulsified it and have put in too much lemon and so wanted to find one that was made with vinegar.

I made a few changes (whole egg at room temp and lemon at room temp, light olive oil not virgin, no sugar and 1/2 tsp ground mustard) and was so happy with the results that I had to write this :).
This second recipe had me using my immersion blender and it emulsified quickly - really was like magic like Crunchy Betty said. The first recipe has you s-l-o-w-l-y adding the olive oil (which is okay really as it is only for a few minutes but I think I was too slow my last two tries and over emulsified my mayo).
I've replaced the mayo in my son's school lunches with this mayo and he hasn't noticed the difference.
Now that I have a Paleo mayo I'm going to look for a Ranch dressing recipe.
