Lunches getting a makeover

Lunch is the bane of my life I never know what to have and usually forget to buy in stuff for lunches. Breakfast and dinner is always fine I get stuff in for them with no bother but Lunch! well it is sort get what we have.
So this is changing and I have decided to sort out some recipes and get to grips with light easy to prepare lunches that are not boring.
I found these Mini Frittatas

Easy to make plus I can vary the ingredients a bit as well and still have a low calorie lunch.
Pasta Salad is now on the menu and homemade soups as well. I have bought in some Tuna in Springwater and will be using this as well for lunches maybe a sandwich but I want to try new ideas so will look up some tuna recipes for lunch later on.
I like the lunch ideas in the Sparkpeople Cookbook but they are higher in calories than I want to aim for. If I eat around 400 calories for lunch I don't want dinner so I aim for a light lunch then I an hungry at dinner time.
So I am on the hunt for light lunch ideas that will satisfy me and be interesting as well.
Salads, I love them but DH does not so when I have that he has a sandwich. I am aiming at making lunches that are interesting and tasty for both of us that way he too gets a healthy lunch that is different.
My cookbooks have come out and I am getting DH to chose recipes from them that he would like. The books are :The Hairy Dieters

The Low Gi Diet Cookbook

Plus the Sparkpeople Cookbook so he has plenty of choices and I can add them to our meal plans and have good healthy lunch and dinner recipes.

When I have made them and we like them they will be added to a recipe card and stored in my recipe box so I have them to hand. That way I don't have keep getting the books out and it will be easier to find them.
So lunch is getting a makeover and we are having fun looking up recipes that can use. DH weighed himself yesterday and his weight has increased by 14 pounds due to his winter diet of eat what I like so he has decided to join me again on eating healthy. It is so much easier when we both eat the same things.

    I think lunch is difficult for many of us. Lunch is frequently on the fly and we don't want to spend the time planning them. good for you! Let us know what you fix. The tuna gave me an idea to fix younger dd a chicken salad for lunch. I use the canned chicken I store with the tuna. I think I will eat Tilapia with veggies. Have a great lunch.

    An alternative to salads, because I don't like them either, are smoothies. I've been making them with spinach, protein powder, and whatever fruit I have on hand. I've made them up to 500 calories, depending on how much fruit I use. Avocado, even, with a slice of lime (peel included), is delicious. I've occasionally had all my fruit/vegetable requirements satisfied in one meal.

So lucky to have your husband join you. Mine, who has a much higher metabolism, continues to be a challenge for my eating program.

    Great that you are doing this and that DH is joining in. I'm planning salad plates to bring into work next week and am quite looking forward to them.
