Wanted: likeable vegetables

Wednesday, January 09, 2013

I have never had a fondness for vegetables. I don't know if they will ever achieve the stature of something as important in my life as ...well, chocolate but I'm trying to give them a fighting chance.
The butternut squash soup I had today was tasty, filling and comforting on a chilly day. And the fresh lettuce for a crunchy salad was a good way to fill up tonight despite the excessive salad dressing that I accidentally poured on it.
The beans and green beans that were snuck into yesterday's soup was pretty darn clever...if I do say so myself.
I should have stayed away from the junk food today but this is a battle I will restart tomorrow.
I will not give up.

I like to mix veggies into things that don't tend to have them. My husband cooked pasta with tomato sauce and turkey meatballs for dinner Tuesday night, and I wanted to pack some for lunch Wednesday, but didn't want too much pasta or too many meatballs, so I cooked a steam-in-bag pack pack of broccoli, poured it into a dish, then put a little pasta, a few meatballs and a bunch of tomato sauce on top. It probably seems odd to anyone else, but I felt like I was eating a big bowl of pasta while really filling up mostly on steamed broccoli.

Have you tried the Green Giant boxed mixes of vegetables? My favorite is the anti-oxident blend.
