Really , Day 9 already? And guess what I quit coffee

This was the sunrise this morning and he pic did not really capture the riot of colour:

Sorry it is sideways, but that happens when I take pics with my phone, I will try get another one that is right way up!

I did it, no coffee for one whole day. Yes I had a headache, even from missing my 2 cups of coffee, but I had unsweetened chocolate/ or 90 % cocoa with a hand full of nuts in the evening after my AMAZING curry Soup dinner!

I found an amazing recipe for Thai Coconut curry soup, but I did not have lemon grass, or green curry paste, or green onions, or bean sprouts, or cilantro leaves......or lime leaves....and the list goes on. So I decided to make my own version of it with the spices and veggies ( and left over turkey that has been frozen) that I have on hand.

My husband ( who does not like Thai food) loved it!
Oh my goodness, Let me just say I was in heaven, it tasted SOOOO good and it was grain and sugar and wheat free. Delicious! I will post the recipe, but here is what it looked like!

Hang in there, the recipe is coming up soon. Easy to make it vegetarian, just replace the turkey and the chicken broth.

My husband commented last night how yummy the meals have been lately and I can attribute it to two things, 1. I got a food processor for Christmas and it chops veggies in a heart beat. Love it and...
2. This challenge. It has forced me to make healthier choices and I gotta have some real recipe's, not only real but ORIGINAL recipe's for my ladies on the challenge and my readers. So thanks for helping me get back to LOADS of veggies.

This morning I went grocery shopping at a store I do not usually go to and I got a few ASIAN and RUSSIAN foods there that I can't get elsewhere and a TON of COCONUT MILK, OIL and I am in heaven. Can't wait to use it in a new recipe or two.

I have quite a few deadlines this week so I am really strapped for time, so I apologise if I Don't visit your page after you post, I will get to it.

I have the car today and have to take kids to dentist appointments and pick up DH from work. So time is short....

Let me know how you are doing and WELL DONE to those who did their homework. What reaction did you get when you told people? I would love to know!

I have a writer's meeting tomorrow that I need to prepare for AND I am doing the music on SUNDAY at Church so I have a slightly insane workload this week. Hey, Glad I am eating well, or I would NEVER get through it!

    Day 9 Results:

    I had no white carbs (other than those possibly "hidden" in things here and there), but certainly nothing that would constitute a serving of carbs. Have been using quinoa and legumes much more than usual. Always liked them, just didn't incorporate them into our meals enough before.

    I had only 3 small glasses of pop

    I had no coffee

    I had no caffeinated black tea, replaced with water, herbal and green teas

    Speaking of water - went back to using my fancy goblet, and adding a splash of lime juice and I managed to increase my usual water intake by 1 glass (still need to work on it though)

    I also exercised so I'm happy with my results so far.

    I now only use coconut oil and EVOO (for about 18 months). I may try some walnut in the future but it's not in any shops for 100 miles (can always buy online) and it's dear, so...I'm happy with what I've got. Have fun!

    Had a sugar meltdown and am really struggling.

    Have another challenge about to start, maybe the added accountability will help. I feel so much better with the "white" gone - don't know why it is so hard.

    Did well today, Reduced coffee to 1 1/2 cup. No sugar/white flour. Only grain eaten, bran. Lots of protein. Exercise, YES!!

    I have a food processor I love for chopping certain things, but I find the slicing blades slice veggies too fine for most of my recipes. Maybe I'll have to give it a shot again. Thanks for the great blog! CJ
