Soups on

Wednesday, January 09, 2013

Yesterday I was staring at the fridge trying to decide what to make for dinner. I am such a saver of small leftover items that I have little containers of everything in the fridge. I was going to have simple sandwiches but then I decided to clean out the fridge and make a soup. Well, 1/2 cup tomato sauce, 1/2 cup french string beans, 4 fresh tomatoes beginning to get spots, a gallon of water and there was a base. I added Italian spices, garlic, onion, some tomato boullion, 1/2 cup of brown rice and 1/2 cup of lentils. Well, 10 mins into cooking it, my husband came around wanting to know what smelled so good.

1/2 later, we were enjoying our soup, me plain and hubby with crackers and dinner was filling, satisfing and easy. Such a pleasure when you don't have to slave in the kitchen, lol!!
