Day 4 - Vegan Challenge!

Today is day 4 of my vegan challenge! The fact that I have had the flu for a few days has make it easier since I can't really eat very much. Although I did have an urge to eat Chicken and turkey sausage, instead I ate Morning Star veggie bacon strips and I have a piece of Tilapia fish last night for dinner. I plan stop eating fish at least during this challenge. I'm not sure if I can or want to give up fish indefinitely. So label me a "Semi-Vegan". So far, I have not eaten any dairy, caffeine, beef, pork, or chicken. I can't gauge my energy level because I am getting over the flu. I will keep you all posted as to my progress.

As for my daughter, she will really on a roll. She is trying new vegan dishes, and snacks. She is eating more fruits and veggies. Giving up processed food is a BIG change for her. She even told me that some of the food additives/color are made from animal products. Who knew that!

    Welcome to my world. I'm a flexitarian, which I may have mentioned before. Flexitarians are basically semi-vegetarian, the base of our meals parallel vegetarians but with some inclusion of meat. Our children are showing us just how strong they really are when they decide something, my daughter went from flexitarian to vegetarian seamlessly. And like me, you've probably given her more instruction on eating healthy than you realize...at least that's what my little said. The more she learned, the easier it was for her to do, and looks like the same for your little one. If you ever question if you've done anything right, stop now, the proof is right in front of you. And in case you're wondering, it's not hard to design a meal plan that works well for both the of you, flexitarians and vegetarians go well together.

Now take care of yourself. Give yourself the time and rest you need to finish pushing that flu out of your system.

    Great for you and your daughter for changing your eating habits.
I love beans and nuts and they make great dishes.

    I hope you are feeling fully recovered from the flu. It's really hitting hard this year. emoticon I'm so happy for you and your daughter. I think I would make a great vegan if I weren't so lazy.. lol Keep up the good work. emoticon
