In the last episode...
DSSECRETS had given me "Pumpkin Ravioli" as my first food challenge. Let me say that if I hadn't any pumpkin ravioli in my freezer, I could have made my pasta from scratch! Shhh, don't tell her!
I had already batch cooked my vegetarian pasta sauce with one dish remaining in the freezer. BUT, it doesn't work with pumpkin. (Take that to the bank!) So I decided to do a Brown Butter (lite salt) Balsamic Sage Sauce to drizzle over the pasta. I said DRIZZLE. You have no business putting a cup of any sauce on any filled pasta! You don't want to take away from the star of the plate! Giada De Laurentiis has an easy recipe for the sauce. I just added a few leaves of sage to complement the pumpkin. It worked.
Healthy is the prime objective. So I decided to rest my pasta on a bed of quick grilled fresh organic spinach, accompanied by grilled mushroom caps and tomato. I love grilled veggies. Plating it with a garnish of strawberry and grapes on a sage leaf, I dusted the pasta with lightly added nutmeg.
Lets do a body count! 190 cal for the three ravioli, 12 calories for the three mushrooms, 5 calories for the tomato, 5 calories for the spinach, 58 calories for a single serving of the sauce. That comes to a total of 270 calories for the dish and 8 calories for the garnish!

This is the last time you will see my fave everyday plate. D's letting me go out and buy a couple of white places just for this Challenge. You will also see me dress the plate better in the future!
