A Quick Note

Yesterday I bought myself one of those tiny little one egg non stick pans. I love to make breakfast sandwiches but disliked having big, spread out or lumpy scrambled egg on my sandwich. This allows me to have a perfectly sized helping of eggs(or in my case, egg beaters) to fit on my little, round, sandwich thins.

I use Orowheat 100 % whole wheat sandwich thins, eggbeaters southwestern style, 1 teaspoon of mayo, a dollop of Dijon mustard, a morningstar prime griller veggie burger (I don't care for their veggie sausages) and fat free sharp cheese. Sometimes I will use real sausage for a treat. I am going to try Canadian bacon this week as well. Yum! *sighs contentedly*

    I like to make eggs for breakfast sandwiches in the microwave: I have tiny Pyrex bowls, one that is EXACTLY the size of an Orowheat, and another that is EXACTLY the size of a Thomas 100% whole wheat 100 calorie English muffin.

I admit a fondness for Morningstar Farms sausage patties-- I find that the slight spicy kick holds up better in the sandwich form. I do concede that the burgers have better 'meaty' texture. I have not tried Canadian Bacon @ home-- I do occasionally use 2 or 3 super-lean lunchmeat ham slices instead, and I always like that for the saltiness (which, of course, is bad :)

You might try Smart Balance Mayo-- it supposedly has a lot of Omega-3 Fatty acids and no Trans Fats.

And I skip the cheese and the savory condiments and use 1 tsp. red plum jelly. Yeah. Weird, I know.


(Today we had Eggs n' Oats-- one of my newest SparkRecipes finds. Sounds sorta gross when you look at the recipe-- but, surprisingly, it tastes like somewhat like a pancake or the base of a breakfast casserole. Great with either salsa or Maple syrup. Even the picky 10-year-old asked for seconds. Awesome!)
