Here's a vegan recipe that TC and I both liked! The butternut squash I used weighed about 1.75 pounds in the store. AND YES, I actually followed the recipe exactly even though it has THIRTEEN ingredients! But I like that it is less than 100 calories per cup and has nearly 4 grams of fiber. Try it, you'll like it!
