Autumn Stew (Vegan)

Here's a vegan recipe that TC and I both liked! The butternut squash I used weighed about 1.75 pounds in the store. AND YES, I actually followed the recipe exactly even though it has THIRTEEN ingredients! But I like that it is less than 100 calories per cup and has nearly 4 grams of fiber. Try it, you'll like it!

    This stew sounds and looks delicious. I just happen to have an abundance of butternut squash stored from my garden. Wish me luck as I venture into a meatless meal. I'll probably have to eat it for lunch and dinner all by myself. But, hey - that is okay too.
