Early January planning love

Only 3 more winter CSA boxes this year ... and then a very long wait until June. My next pick up is in two weeks, and the offerings show how our weather has gotten much colder and less hospitable to tender things that grow.

Here's what I plan to do with yesterday's box:

Salad greens: for a daily salad or two while it lasts. The bag is significantly smaller than a month ago.

Beets: will be baked and topped with herbed goat cheese to go with the salads.

Carrots and Celery Root: will go in a ground turkey and lentil stew tonight.

Onion. Hmm -- just one onion? Will definitely need to buy more at the store or farmer's market. I'll use the one in tonight's stew.

Parsnip. Will add to butternut squash for a soup this week ... and we'll have it with some of the sourdough we brought back from our trip west last week.

Red Cabbage. I'll make a slaw to substitute for fresh "greens" when the salad bag is used up.

It's two weeks before the next box, so I'll definitely be headed to the indoor farmer's market next week!

    As usual, your meal plan is sounds so yummy !! I just went to my local farmer's market myself and got bunch of veggies. I love beats but my beat always go to my juice. Have you ever juice your CSA box?

    I greatly admire that you know what to do with all your veggies! lol. I have some tried and true favorites in the garden and on the table, all summer veggies. I LOVE hearing what you choose to do with your box each time!

    I've said it before, I envy the fact that you love your veggies. I am lucky if I can get 1 or 2 in a day. Same with fruit. Now that the Christmas oranges are gone, I'm going to have a hard time with fruit, as well. I wish I had a love for them like you do. :) Thank you for my veggie soup, I am sure it helped with my flu. If only I could convince myself to make some more. emoticon

    one onion i would have thought the same,wont go far at all,lol.i have a 5kilo back here love if you lived nearer you could have had some off me. emoticon
