Only 3 more winter CSA boxes this year ... and then a very long wait until June. My next pick up is in two weeks, and the offerings show how our weather has gotten much colder and less hospitable to tender things that grow.
Here's what I plan to do with yesterday's box:
Salad greens: for a daily salad or two while it lasts. The bag is significantly smaller than a month ago.
Beets: will be baked and topped with herbed goat cheese to go with the salads.
Carrots and Celery Root: will go in a ground turkey and lentil stew tonight.
Onion. Hmm -- just one onion? Will definitely need to buy more at the store or farmer's market. I'll use the one in tonight's stew.
Parsnip. Will add to butternut squash for a soup this week ... and we'll have it with some of the sourdough we brought back from our trip west last week.
Red Cabbage. I'll make a slaw to substitute for fresh "greens" when the salad bag is used up.
It's two weeks before the next box, so I'll definitely be headed to the indoor farmer's market next week!
