Makes 8 servings
4 cups canned tomatoes, chopped reserve liquid
1and 1/2 cups of water
4 chicken bouillon cubes
2/3 cup each, chopped green pepper and onion
2/3 cup sliced mushrooms
4 oz. smoked turkey sausage, sliced
8 oz mozzarella cheese, shredded
8 tsp. imitation bacon bits
Place all ingredients , except cheese and bacon bits in a 4 quart pot. Bring to a boil and simmer for15 minutes. Divide evenly. Top each serving with 1 oz. cheese and 1 tsp. bacon bits.
Optional add 2 cups cooked pasta and simmer with soup.
This was a old recipe from the 1990's but is so very good with or without the pasta.
