For diner tonight I used my left overs of a pork tenderloin and seriously...was very good. Started with the same principle of a phily cheese steak but pork instead.
Saute my onions, green pepper, carrots (yep, thats right) cut in small slices,
added the pork tenderloin to the mix, 2tbs of BBQ sauce, pour in whole wheat sub (6") and 1 slice of provolone... et voila!
I should have taken a picture to show you or for my own sake to remember what I did... I am full to the brim with all the veggie, Hubby liked it too and enough left overs for a lunch tomorrow.
Love those moments where it is a win/win situation.
