What to do with left over pumpkin?

You might have a can or two of pumpkin left over from the holidays. Or perhaps you notice that canned pumpkin is on sale everywhere you look!

Don't let pumpkin languish on your shelves until next year!! It is a great colorful vegetable that is useful for so much more than Pumpkin Pie.

Try this recipe for breakfast. I use if for dessert sometimes too!

5-8 oz of pumpkin
1-2 tbsp of chia seeds
1 cup of milk or almond milk (I use Almond milk - less calories and carbs!)
1 tbsp of honey or some stevia to sweeten
Pinch of cinnamon or pumpkin pie spice blend if you want!

Blend with a hand mixer or blender. Give the chia seeds a few minutes to work their magic and turn everything into a lovely pudding like consistency. (The more chia seeds the thicker it will get!)

You can blend in some ice if you want even more volume and more slushy like drink.

In case you don't have hand blender, treat yourself to a hand mixer like this one:

It will be your best friend for making smoothies like this one, or for blending vegetables with buttermilk and broth for great, creamy soups!

    I love pumpkin recipes but, alas, no pumpkin here. They had the actual pumpkins in the store for maybe 1 week and then they were gone and there is no canned variety. This year I will grow my own but it's a long wait from now until the fall emoticon

    Sounds tasty - when I saw your blog title, I thought you were talking about actual pumpkins. I use pumpkins left from Halloween and Thanksgiving to make everything from Pumpkin Butter and Pumpkin Pie to Pumpkin Soup.

    I make black bean pumpkin soup. Pumpkin bread, muffins, waffles, too. Haven't tried it in a smoothie. I use chia seeds in lots of things (in fact, we keep some in a shaker jar at the table & sprinkle them onto our meals). But I don't like the consistency of the chia "puddings" -- seems "gluey" to me. Hooray for new ways to incorporate healthy foods into daily life!

    I have a feeling that it may also be nice in a spinach and mushroom lasange Normally, you'd put butternut squash in it, but I think pumpkin *MAY* work?
