Meal Plan for January 1-4

Hi All! I hope everyone had a great holiday. I had a blast up in Wyoming, even though it was SOOO COLDDDD. We hung out with BFs family, and even went snowmobiling one day. That was a ton of fun, and something I could definitely do every day! I got a lot of down time also, to just relax, which I desperately needed. It's so easy to get caught up in every day life, it's nice to just unplug and do NOTHING for a few days. I really enjoyed myself with the food too, ate pretty much whatever I wanted (even my guilty pleasure... Easy Cheese and crackers!). We got back on 1/30, but then left again on 1/31 to go to a hotel party in downtown Denver where it was open bar with top shelf liquors. Needless to say I didnít hold back on my consumption, and they had a HUGE buffet with tons of great food. After all that, I only gained a half pound!

This was all very encouraging for me, and made me realize I donít need to be as strict as I had been with my eating. So, for 2013 Iím going to loosen up a bit. Iíll still track and be careful during the week, since I actually enjoy it, but on weekends I will let go and make the foods I want to make, or eat what I want to eat when we go out. While Iíve already hit my goal weight, I would eventually like to get down to 140, which would put me in the ďhealthyĒ BMI category. So, weíll see if this plan of mine will get me there and still allow me to let loose and enjoy life.

Now, for the meal plan this week. Itís a bit short since I only needed to plan for 4 days. I also tried to make use of what I had in the house to keep my grocery bill down, since we are planning a Costco trip this weekend and that always puts a HUGE dent in my wallet. Hereís the plan for this week:

Itís basically a homemade, non-processed version of Hamburger Helper, which my BF loves. I used 85% lean ground beef, and I worked it out to 620 calories per serving. I left out the olive oil, I didnít see any reason to use it just to brown the meat. In the end it needed some kind of kick, so I will continue to work on it with the seasonings.

I worked this out to 460 calories for a 5oz chop. I will serve it with some frozen veggies, probably the Green Giant Seasoned Steamers Mediterranean Blend, which is a few different kinds of squashes. Iím not usually a fan of frozen veggies but I do like the Seasoned Steamers. They make it easy and have good flavors.

My store had Tenderloins on sale 2 weeks ago so I bought a few. Theyíre so easy for a weeknight meal. I worked this out, for a 6oz portion, to be 436 calories. I plan on serving it with SkinnyTasteís garlic mashed potatoes: www.skinnytaste.c

I use 2% greek yogurt instead of sour cream for some added protein. Lastly, I will have some Green Giant Seasoned Steamer Tuscan Broccoli. My store was completely out of fresh broccoli, I had planned on roasting it, so I ended up buying the frozen.

The whole day is up in the air. Iíll either have leftovers (if there are any), or a frozen meal for lunch. I THINK for dinner Iím going to take BF on a hot date for Chinese food. He spent a lot of money on our trip to Wyoming for gas and other stuff so I figured Iíd treat him for a dinner out. Iím a big spender ;)

Iíll be back again tomorrow or Friday with my plan for next week! Iím just getting it finalized and working out my calorie counts.

    The pork chops I made tonight were super delish, quick and very very easy! I only ended up using only half of the olive oil in the recipe, and half of the tomato "sauce" was plenty for 2 chops. So the calories for a 5oz chop with sauce ended up being reduced down to a very reasonable 380 with those changes. Oh and I didn't have herbes de provence so I just used italian seasoning.

    Glad you had such a good time away and some good R&R time too! We all need that from time to time. Your meals sound yummy! I agree with you, our bodies do need a break every now and then from being so strict! I wonder why I would agree with that! hahahahaha! Happy New Year and have a tremendous 2013!

    Sounds like you had a great time with BF's family for the holidays! the New Year's party you went to sounds awesome. I would definitely not have held back either with open food and an open bar. Your meal plan have definitely inspired me to make meals plans for myself, so they are always a treat to read and to get ideas. Happy new year and happy Costco shopping!
