Its hard to be an anti-vegetarian

So, I decided to go see a nutritionist at the suggestion of a friend of mine.
Well, I kinda knew what she was going to say before I even got there - you need to add more vegetables to your diet.
But I don't like them!!!
I am not motivated to try them - I know I don't like them.
I sound like a 7 year old that won't try the brocolli on her plate.....

So, I am thinking, I need to set some mini-goals for myself....perhaps trying 1 vegetable a month, cooked in different ways, until I find a way that I like to cook that certain vegetable?
But where to start???

    I have a lot of trouble eating vegetables, so let me tell you my secret.
Once a month, I cook a huge pot of vegetable soup. In two quarts of water, I add :
I chop and drop into the pot a lot of vegetables: brocoli, zuchinni, carrots, chayote, cabbage, celery, etc. etc. whatever you want to think of, add chicken boulliion, a couple of large tomatoes, one onion, garlic and seasoning to get flavor. Once it is all overcooked, I let it cool and with a hand blender, make a creamy but not too thick, vegetable soup, separate it in one and a half cup portions and freeze it, I will eat a portion a day. and just drink it,
It leaves me satisfied and vegies eaten. it has wowrked for me for a long time and I do not get bored of having it.

    Chop them up very small and put them in soup, stew, omelets, etc.

    I hated veggies, except corn, until I committed to healthy eating in 2003. The food plan I chose made it clear that veggies were essential for weight loss. You wrote that you would consider trying one new veggie a month, cooked in different ways. That's what I did, only it was one new veggie a week prepared two ways. My first choices were the veggies friends ordered in restaurants. I asked for their favorite recipes. It was shocking that veggies taste really great. If I were starting now, I'd choose Sparks recipes with the highest ratings. My favorite is any roasted veggie. I made a game of trying every veggie in the produce dept. The only one I don't like is artichokes. Now I'm sure I hated veggies because my mom overboiled canned veggies. They still taste gross! I wish you the same success.
