Mom wanted to do a New Year supper with my brother's family and ours. She wanted me to make my stuffed shells. Ok, I make some seriously tasty stuffed shells, stuffed with moz, provolone, ricotta, feta and parmesan cheese. I did a recipe on SP and I could have only 2 shells to stay in my calorie limit and feel good about myself.
Then I remembered doing shells with spinach, mushrooms and onions and a little bit of cheese. I did a recipe that way and I could have 5 whole full stuffed shells and garlic bread. Since I am the one making it at my Mom's I told her that I was making me and DH special shells.
They were AMAZING!! I didn't feel like I was deprived but came away with feeling FULL, I know that I should have stopped before I hit the full mark, but they were good. Mom even tried one and enjoyed eating it.
