Paleo Diet Day 49: Working out and a home-style New Year's Eve

Monday, December 31, 2012

Today I decided to end the old year with determination and perseverance, in order to set good patterns for the coming year. I moved ahead in my workout program with an hour-long strength training session. I really want to add some muscle mass and solidify my core this year. I'm working mostly with free weights. I enjoy the workouts, and I find the strength training complements my running nicely.

We declined an invitation to a New Year's Eve party, in part because the roads are icy and there's always people who have been drinking on the road, in part just to reduce the rush and busyness in our lives - we'd seen many of the same people at the dinner party two days ago anyhow. Instead we had time to take care of our animals and for me to cook a new dish: zucchini with garlic, mushrooms, and egg, mixed with kelp noodles. Here is the short photo essay:

1. Veggies cooked and mixed with egg

2. Add the kelp noodles - a great food for those staying off traditional pasta:

3. After mixing and warming the noodles, add a generous portion of fresh parsley:

4. And dinner is served! Guten Appetit!

And two hours later, enjoy a dessert made by my teenage daughter: a tart made with a stuffing of organic cream cheese, xylitol, and vanilla. Outside layer: maple almond butter, ground almonds & hazelnuts, raw milk, and a tablespoon of brown rice flour. All of this covered with berries:

This makes for a very easy good-bye to 2012 and a smooth start to 2013....

Here's wishing all of us a coming year in which we become even healthier, fitter, and more knowledgeable than ever! emoticon emoticon

That desert looks so yummy!! the main course looked good too. I don't like to go out on New Year's Eve either and prefer a quiet evening at home.
Happy New Year!
