My favorite Christmas present this year was Rocco Dispirito's new cookbook, Now Eat This Italian. It includes recipes from traditional Italian "Mamas" but cut down to less then 350 calories. Seriously. His fettuccine Alfredo is only 350 calories! I have always been a huge fan of Italian food (but honestly, who isn't?). When I went to Italy a few years ago, I actually lost weight, even though I was eating tons of pasta and pizza. Part of it was from walking all the time, but I also began to realize that the way American's cook Italian food is so far from the traditional Italian cuisine. Instead of a giant bowl of pasta, a true Italian meal is focused on protein and veggies. Rocco's recipes are so easy (I've already tried a few of them) and they taste amazing. Who knew I would actually like Kale?!?
I'm so excited to be able to eat pasta and carbs yet still be healthy!
I'm going to be attempting red snapper puttanesca later this week, I will report back on how it works out.
