I hate menu planning. To those of you that enjoy it in some form or fashion, you all are freaks!
Haha, just kidding. But it's usually not something I enjoy, especially when I have no ideas to get me started. I do enjoy blogging my plans, though, for some odd reason, so that's what I"m doing today.
Here are my plans for the next week, keeping in mind hubby will not be home for at least one dinner, possibly two:
Black bean and sausage soup (hopefully using up the remaining turkey sausage I have in the freezer)
Frittata with spinach and sweet potato
Honey balsamic chicken, with a side of quinoa
All the above are SP recipes, yay!
I'm hoping to get at least two dinners out of the soup, with plenty left to freeze for lunches. I don't know that I could push it to three dinners without being tired of it. So that should last us four nights. Add in the nights hubby will not be eating at home, and New Year's Eve dinner (not sure what to do there....any ideas, anyone?) and that will last us the week. For lunches and snacks, I'm not too sure yet. I know I have tonight's spaghetti left, and several servings of chili in the freezer. Maybe that last can of soup and my leftover rolls? I've been avoiding the can of soup because of all the sodium and processing, but I guess it's better than some of the foods I've been eating lately.
I've also been thinking about posting pictures of some of the dinners I've been enjoying lately. I think that may add a bit of accountability I think we all look for. Anyone find something like that working for them?
