I'm not a low carber - I need my carbs for running - but I will go lower carb on days I don't run.
For a while I've been browning some veggies, adding some eggs & a little cheese. Usually the veggies have been some form of greens but the other day it was brussel sprouts & it was soooo good.
Brussel sprouts sliced thin
1/2 tbsp butter or some sort of oil, margarine
Daiya or light cheese
I've been using a cast iron pan. Heat to medium. Add butter/oil/whatever & melt. Add brussel sprouts & toss & roast til lightly browned. Add in eggs, sprinkle with cheese & scramble.
Simple, healthy, fast & delicious.
The other meal is my honey tofu, which I changed up just slightly yesterday & it was yummy.
2 block firm tofu cut into 16 slices
1 tbsp + 1 tsp honey
1 tbsp butter/oil/whatever
2 tbsp almond flour (ground almonds)
Again, I've been using my cast iron pan. Heat over medium. Melt butter/oil/whatever + 2 tsp honey. Dredge tofu slices in almond flour on one side & place almond flour side down in hot pan. Cook til browned. Drizzle with remaining 2 tsp honey & turn. Cook til browned & enjoy!
