Why there will be no icing! But the cake isn't a lie.

So my wedding cake stand arrived, combined with going to a wedding couple weeks ago, I came to a decision.

I hate fondant, even "good" fondant (not sure those words belong together).

I hate store made marzipan, and while home made tastes good (well, it actually IS almonds not flavouring) it doesn't last and actually you know what? I don't really like royal icing either. Its sugary nothing.

So even though I found a wedding cake maker who would ice my home-made fruit cakes, I have decided I really don't like icing and why on earth should I pay for something I don't even want to eat!

I'm going to bake my cakes in February, store them, feed them, then come July, I will top them with glistening jewels of candied fruit and bright nuts and the top tier with crystallised flowers, and decorate the edges with flowers to match mine.

Its going on a Wilton "Graceful Tiers" stand, so it doesn't need pillars etc, as it has to travel 350 miles with us to the actual wedding venue!
