Why there will be no icing! But the cake isn't a lie.

So my wedding cake stand arrived, combined with going to a wedding couple weeks ago, I came to a decision.

I hate fondant, even "good" fondant (not sure those words belong together).

I hate store made marzipan, and while home made tastes good (well, it actually IS almonds not flavouring) it doesn't last and actually you know what? I don't really like royal icing either. Its sugary nothing.

So even though I found a wedding cake maker who would ice my home-made fruit cakes, I have decided I really don't like icing and why on earth should I pay for something I don't even want to eat!

I'm going to bake my cakes in February, store them, feed them, then come July, I will top them with glistening jewels of candied fruit and bright nuts and the top tier with crystallised flowers, and decorate the edges with flowers to match mine.

Its going on a Wilton "Graceful Tiers" stand, so it doesn't need pillars etc, as it has to travel 350 miles with us to the actual wedding venue!

    Sounds wonderful. My daughter had spice cake with cream cheese frosting for her wedding cake and everyone thought it was the best wedding cake ever.

    What a great way to make your wedding your own. I love when people do what makes them happy instead of just social convention.

I used to bake wedding cakes and as an FYI to everyone. You aren't supposed to actually eat the fondant lol. It is just meant as decoration and it is perfectly acceptable to just peel it off and leave it to the side of the plate.

    I love icing but loathe marzipan. :-) We'd make a good team and demolish the coating between us. LOL

However, it sounds to me like the cake you are planning will be PERFECT for you. My daughter's wedding cake was made of lots of individual sponges of different flavours arranged like flowers on tiers and looked and tasted absolutely amazing!

    I've never had fondant coating on a cake (only the fondant stuff that's the filling inside a chocolate candy), so I cannot begin to imagine liking that sort of thick stuff coating a wonderful and flavor-full fruit cake like I know is what you have for wedding cakes. Your bejeweled idea sounds much more beautiful and appropriate for a summer celebration.

    Wow, my great grandmother used to make fruit cakes like that!

I think that is a unique idea. I hate fondant, too. It is really hard to chew, and I always feel like I'm chewing on a sweet wrapper! It looks so pretty and smooth, but tastes odd.
