I give. I have used every available excuse I can think of to not have dinner ready/planned for a while now, and hubby has had to rescue us countless times with fast-food ickiness. Now that I am out of excuses, I guess it's time to get my act together.
So here goes...my dinner plans for the next few days, at least:
Tonight, at least, is already started. I'm making a baked oatmeal, which sits over night and then goes in the oven the next morning (in this case, evening). I added peaches this time..yum. I'll serve it with turkey sausage and eggs.
I bought some frozen salmon from the grocery store, and it came ready to go with a cedar plank and everything. Should be interesting. I'm serving it with wild rice, and steamed asparagus or broccoli, depending on what I find.
I'm making boca burgers (which are just vegan, frozen burgers. Throw them in the broiler in the toaster oven, and turn out awesome!!) with cheese, tomato, lettuce. On the side will be garlic butternut squash with parm cheese.
Lastly is Chef Meg's Empty the Pantry Stew, with some leftover turkey sausages I have in the freezer instead of the kielbasa. I hope they defrost ok, I've never frozen sausage in the case like that. We'll see! I'm thinking of making a bread to go with it, if I can make everything last until the weekend when I'll have time to actually do bread.
Any other ideas on what to serve with stews?
Ok, how proud am I now? Haha! Now I just have to stick to the plans. My problem is always being 'too tired' to 'do all that work...' so I use that excuse a lot. Especially now that it gets so dark so fast. I started turning on more lights, and waiting to sit down until I've done at least a few things. That helps keep the momentum going, I think.
Oh, lunch - I made a pot of thrown together chili (my own, empty the cabinets recipe! haha!) that I will be eating. Snacks and such, I havent' figured out just yet...
