Good grub

I've probably used more recipes in the past 2 weeks than I have in . . . well, I can't remember when. It seems like I'm craving good food.

Yesterday I made Low Fat Eggplant Parmesan and today it was Quaker Oat Apple Crisp. Oh, yummmm!

Just wondering if anyone else is spending more time in the kitchen. And if so, what are you making?

    Sounds like everyone has been very busy in the kitchen. I am still having trouble cooking for one. I am going to try to start making double meals and freezing one for later in the week to see if that helps.

    Funny you should ask. I spent almost the entire day in the kitchen making christmas goodies. I decided not to go for new recipes in favor of family favorites, but I used ever so tiny cookie cutters and made everything smaller than usual. I made sure I was not hungry while baking and had a sink full of soapy water to toss the beaters and bowls in before I had a chance to lick them. Haven't even had a taste yet.
Cooked up some shrimp for supper that I marinated in lime juice dill s and p and garlic powder. Made some Cole slaw and oven roasted some tiny potatoes for son and DH.
Tomorrow I am having family in for Donairs. I have prepared the meat already. Will make my sauce sugar free and use either half a pita or serve on lettuce.
I am enjoying my food so much more. Putting a little more thought into my meals leaves me so much more satisfied and almost every calorie is from good nutritious food.
Would love a link to your eggplant Parmesan too if it is online.

    I'm just starting to cook a bit more on weekends. Yesterday I made Chicken Taco Stew (
ipe-detail.asp?recipe=280479). I substitute ground turkey for the chicken breasts.

I've been craving eggplant parm. Would you mind sending me a link to the recipe, please?
