Paleo Diet Day 26: Must gain weight, will put eggs back into diet

Sunday, December 09, 2012

I'm writing this as I munch on a most delicious dessert my wife just made: "Almond- Coconut Chocolate Bars" made with coconut oil, almond flour, coconut flakes, xylitol, cocoa powder, and a teaspoon of ground coffee. emoticon

This morning I stepped on the scales and my weight had dropped 3-5 pounds from where it's been consistently for years to 117. (I'm @5' 7") I think this has happened since I went on this famous elimination diet, now almost 4 weeks ago. My wife and I agreed I need to put the weight back on, esp. since I'm trying to keep my fitness level up and train for a half-marathon in March. So ... tonight I ate six (smallish) pieces of deli baked chicken, plus sprouts and carrots, and two bars of the above-mentioned dessert.

Tomorrow I'll reintroduce eggs back into my diet. I think my skin might have improved a bit, certainly didn't get worse, with the elimination diet. With this approach one has to reintroduce the eliminated elements at some point anyhow in order to see if there is a negative reaction, so I was going to do this soon anyhow. I want to start with eggs because it opens up so many possibilities for eating paleo, especially at breakfast, which has been rather spartan (if the Spartans actually ate bananas) emoticon

I look forward to breakfasting on bacon and eggs, with coffee. emoticon

hmmmm, wow. That is a switch! Hope you achieve your goal and good luck in the marathon! I just began running this month if you can call 4 mph running. LOL I like it! Learned how to properly lace my running shoes today to keep them on my heels but not cramp my feet!
