Near goal and how we are doing Paleo.

We are eating mostly paleo. Stopped wheat and glutens months ago. I cook and bake everything. We have had pizza, muffins, cookies, bread, ice cream, crackers and pie. I can eat less than DH of these things. DH has scotch instead so beer. He was a beer freak. He had gout, no more. I have a drink every month or so. That may be red wine. I make grass fed jerky for us. We also keep a nut mixture around. We used to eat tubs of popcorn. DH stopped asking for it weeks ago. I make coconut ice cream. Sometimes use mix ins of dark chocolate or pecans. Using a bit of Heath bar today. Usually sugar free. Use some natural sweeteners.
I go pretty low carb when I want to drop weight. I learned to like celery with almond butter. I just love almond butter. Going to try making my own coconut milk and macadamia butter this weekend.
I made us sweet potato chips last and this weekend. We are making 10 pounds ea for three friends and family for Christmas.
We had a full paleo Thanksgiving. Some things were too sweet and thrown out the next day.
DH loves his bread. We make it almond flour in the bread machine and slice, keeping in the freezer. He only has one slice a day when he has it. It is made with other starch flours too.
We bought grass fed beef quarter and pasture pork half from Internet that was delivered to nearby city later. We bought a freezer this year.
We also bought a Sous Vide. It is a constant water bath at a set temperature. You use a vacuum bag and sealer for the meat.
DH went off his gout and stomach and blood pressure meds. I don't have migraines, was plagued with them for ~ 30 years, sometimes daily.
I use coconut oil in my skin. Soft!
I use coconut oil, eggs, avocado and bell pepper for breakfast. Some times bacon. I make our mayo, catsup, salsa. I use MCT oil on a salad before the EVOO and balsamic. I make frittata or crustless spinach quiche for breakfast. DH likes a bacon, egg and toast bkfst.
I use the Vita-Mix, Excalibur, crock pot, Sous Vide and stainless steel pans all the time. I bought several books, cookbooks and use the Internet a lot for recipes. I make DH anything he says he wants (that I can make paleo), I am so impressed that he eats this way and does not complain. He lost ~ 30 pounds and does not snore anymore.
I am near goal and have worn three of my small suits lately.
Just trying to go very low carb most days of the week and notice when I eat and am not hungry. The more I notice, the more I change my ways.
Am using a Kettlebell that is too heavy for me to squat and do arm swings. 35 lb. I do air squats too. Been swimming even as the pool has cooled down. Trying to get DH to build me a chin up bar. Sleep without ( ) to cool off and take advantage of the cold thermogenesis. Try to use PC and TV less just before sleep.
Taking deep breaths and not sweating the small stuff, it is all small. We are old and planning a simpler life style.
We both don't care about decorating this year, so calm Christmas. We have little family left.
