Paleo friendly recipe included!
HEARTY BEEF STEW: tried and true, warm and tasty.
Original recipe from everydaypaleo.com was adjusted by me for my own personal tastes and nutrition.
2 pounds uncooked local beef cubes
4 c organic chicken broth (or beef broth if you can find it without MSG)
1 large uncooked onion-diced
1 cup organic carrots
1 medium uncooked butternut squash*
14oz canned diced tomatoes
2 garlic cloves
1 T oregano
2 T ground cumin
1/2 pack frozen spinach, thawed**
NOTE: if you can find canned diced tomatoes already seasoned with garlic & oregano then you're ahead of the game! Just eliminate the T of oregano & cloves of garlic from the above listed ingredients.
*Check your local grocery store for pre-cubed butternut squash in the produce section.
**Spinach will be added at the end of the cooking, to retain maximum nutrition.
Place all ingredients in a slow cooker on low for 7 to 8 hours, except for spinach which is added at the end. Enjoy in good health!
You may also choose to sprinkle ground flaxseed on top just before serving for fiber & omega 3's.
Note: When there are leftovers, you may find (like I did) that the 2nd day tastes the best, after all the flavors have marinated and meshed. It's soooo good.
