My musings over mushrooms and cheese all started today, long after my 45 minute calisthenics workout which I squeezed into my day just before I had to rush and get ready for a diabetes seminar.
The informational seminar was put on tonight by one of the local hospitals and I have to say I learned a bit. However, some of what I learned, I’m hoping will never have to be put into practice, but at least I have a glimpse into the world of carb counting. Since I was diagnosed as an early-stage diabetic about 3 months ago, I think it’s high time I start learning more about the world of diabetes. That’s what I was thinking anyway when I signed up for the seminar.
From what I can tell from my usage of SparkPeople so far, the website makes carb counting really easy with its nutrition tracker; so I’ve got a head start on that without even having to try that much at it. I guess I just have to pay more attention to my carb column listed in the nutrients section and also in the carb column next to each food that I’ve put into my tracker.
Sadly, tonight, as a result of some inspired moment from the seminar, I find myself switching out my itty bitty sweet treat for something without any carbs in it because today's consumption has put me slightly on the higher carb side of things. So I get two low-sodium Colby cheese sticks instead of my luscious peanut butter ice cream. Oh the horror!
Okay, maybe it isn’t that bad, after all I’m a cheese-aholic. That’s probably what got me into this mess in the first place. Cheese. Yup. Cheese.
Cheese on broccoli, cheese on baked potato, cream cheese in those incredible jalapeño poppers, mmmm … cheese. …
Oh and then there’s extra cheese on pizza and extra cheese on giant greasy Philly cheesesteaks, oh, and one of my favorites, grilled cheese on sourdough with slices of fresh tomato! Yum! There’s Mexican cojita cooked until it’s a nice golden brown, oi vey! Give me a lime and some freshly cooked cojita and I’m in cheese heaven!
Yup. Cheese did this to me. I’m a victim of cheese’s seductive powers. It’s a foregone conclusion.
So why so down about switching ice cream for cheese if cheese is one of my biggest vices?
Well, frankly, my cheese sticks are just not melted. They’re not in something or on something, nor are they covered with something. They’re just all by their selves. It’s okay that way, but cheese is what makes other food taste good!
And these cheese sticks aren’t even the stringy type. No strings to pull here! Where’s the fun?
Maybe I’ll take my cheese stick and melt it on or in a low calorie vegetable. I have enough calories left for that I think. I wish I had mushrooms. Oooooo. Mushrooms! That would work! I dig mushrooms! Awesome! That would do it!
Just to be sure, I Googled mushrooms quick. They have carbs, but not very many. That number of carbs I can deal with. I think mushrooms are my new best friend. I’ll just try to forget how they’re fertilized! Or at least so I hear about how they are fertilized.
Oh, whatever. It doesn’t matter. I’ve heard about that a long time ago and I still eat the critters. Their so tasty, I don’t even care!
Pass me the poo-poo plant! Oh Portobello, you’ve done it to me now!
Wow. It seems I’m freakishly into my food just a little too much! I promise you though, I still keep careful track of everything I eat, and except my little nightly treat, I’m confident that most of my food choices would not only make the grade, some might even pass with flying colors.
Hoo yah! Thank you mushrooms! You saved my pleasurable nightly treat! I love you!
